Although many food and nutrition trends seem to come and go – Gluten-free products are here to stay, as the number of people who battle Celiac disease or have chosen to go gluten-free is on the rise!

Gluten is a family of proteins including wheat, barley, and rye that is responsible for the elasticity of the dough. Wondering what Celiac disease is?

Although Celiac disease is sometimes thought of as an extreme version of a wheat allergy, it is actually an autoimmune disease in which the immune system recognizes the proteins as foreign invaders and releases antibodies to neutralize the threat. Switching to a gluten-free diet is the only medical treatment available for those with Celiac disease.

You may have heard about celiac disease or gluten/wheat sensitivity. Maybe you’ve experienced some of the more common symptoms, like stomach cramps, diarrhea, or bloating.

Many people begin to make the connection between these symptoms and eating food containing gluten. There can even be effects not related to the gut, like anemia, headaches, or extreme tiredness.

Any of these can be signs of gluten-related disorders, like celiac disease or gluten sensitivity.
